PB AND J  CUPCAKE

 

 "At first I was nervous, until I tried one, and it was awesome", one of the girls I work with said that about the PB & J cupcake. It does sound odd I suppose.... but I thought it sounded pretty serious, and from trying the one at Baked by Melissa in Nyc, I knew I could make it, and make it better :) It's not exactley what I wanted, but only 3 weeks in on my year (maybe more) mission of baking, I don't expect it to be. I was however, happy with it and my happy to be guinea pigs co workers really liked them. Next time, I'll add more PB to the frosting, make the cake lighter and try to bring out a more nutty flavor (I was told to use hazelnut flour---WHAT is that?!) Oh it's going to be a long year!!
*Update, these are my favorite so far. I made the frosting after this post, forgot to take a picture before the people at work at them all. It was a peanut butter cream frosting. Kind of like....heaven in your mouth. Or like a friend said, " like floating on a PB cloud"


In honor of saint pattys day I made Guinness, Baileys & Jamenson Cupcakes which my friend named "CAKE BOMBS" cute! :) It is a Guinness chocolate cake with a baileys and chocolate ganache filling and a baileys and Jamenson buttercream. Def great for St pattys day, and people who like alcohol in their dessert :)

Strawberry Frosting!

My first buttercream with fresh fruit. It's a strawberry buttercream made with fresh strawberries , on top of a milk chocolate cake. However, next time I will frost this on top of white cake with a white chocolate filling and white chocolate shavings on top. Delicious!:)
